Banana Chocolate Chunk Bread

My husband is a fan of all things chocolate (gotta love him!). He despises anything green that resembles a fruit or vegetable, unless of course it's hidden among other foods (that have a chocolate taste, of course!).

I recently made a banana bread with chocolate chunks that he absolutely loves, and thought I'd share the recipe with you.

BANANA CHOCOLATE CHUNK BREAD

2 C. all purpose flour
1 tsp. baking soda
1/4 tsp salt
1/2 c. butter
3/4 c. dark brown sugar
1 tsp. pure vanilla
2 eggs, beaten
4 medium ripe bananas, mashed
4 squares semi-sweet baking chocolate, broken into small pieces

Preheat oven to 350 degrees.
Spray a non-stick bread loaf pan lightly with cooking spray.
In a small bowl, mix flour, baking soda and salt. Set aside.
In mixer at medium-high speed, cream butter, brown sugar, vanilla and eggs until light and fluffy.
Add mashed ripe bananas and mix on low until well blended.
Stir in flour mixture just until moistened. Add chocolate chunks and stir until well blended.

Pour into loaf pan and bake at 350 degrees for 1 hour or until toothpick inserted in center comes out clean.

Cool 10 minutes before removing from pan.

Slice and serve warm, or let cool completely.
